The wine shows an intense ruby red color and nuances of ruby red, little
transparency. The nose denotes intense, clean, pleasing and refines aromas
which start with hints of black cherry, plum and black currant followed by
aromas of blueberry, violet, vanilla, licorice, cocoa, eucalyptus and black
pepper. The mouth has good correspondence to the nose, a slightly tannic
attack and pleasing roundness, however balanced by alcohol, good body,
intense flavors, good tannins. The finish is persistent with flavors of
black cherry, plum and black currant. Passo Doble is produced with the
double fermentation technique by adding slightly dried Corvina grapes. The
wine ages for 10 months in barrique followed by at least 2 months of aging
in bottle.
