Colli dell'Etruria Centrale Vin Santo Occhio di Pernice Dolce Sinfonia
shows an intense ruby red color and nuances of brick red, transparent. The
nose reveals intense, clean, pleasing, refined and elegant aromas which
start with hints of black cherry jam, blackberry jam and plum jam followed
by aromas of dried fig, blueberry jam, cinnamon, dried violet, cherry
macerated in alcohol, tobacco, nail polish, rhubarb, mace and licorice.
The mouth has excellent correspondence to the nose, a sweet and round
attack, however balanced by alcohol, good body, intense flavors, pleasing
crispness. The finish is very persistent with long flavors of blackberry
jam, black cherry jam and plum jam. Colli dell'Etruria Centrale Vin Santo
Occhio di Pernice Dolce Sinfonia ages for 3 years in cask followed by 12
months of aging in bottle. |
