Castel De Paolis certainly is one of the best expressions of Latium, committed to the revaluation of local wines - in particular, Frascati - as well as committed to a precious and rigorous research activity started in 1985 thanks to the fundamental contribution of prof. Attilio Scienza. An event dedicated to the wine excellence of Latium and which had as protagonists the wines of Castel De Paolis, renowned all over the world, not only for Frascati wines, but - in particular - for Donna Adriana, I Quattro Mori and Muffa Nobile. To the evening took part Fabrizio and Alessandra Santarelli, owners of Castel De Paolis, a special occasion which certainly allowed participants to better understand the highest and most noble quality of Latium. Fabrizio Santarelli has in fact introduced the participants to the discovery of his winery and to the peculiarities of the six wines tasted during the event, focusing - in particular - on the fundamental research activity which allowed the wines of the winery of Grottaferrata to reach the top of wine making Olympus of Latium and Italy. The event started with Frascati Campo Vecchio 2017, a wine having a remarkable personality and that, undoubtedly, offered a different and truly distant understanding of the qualitative level expressed by this territory, confirming the huge potentials and the historical viticultural vocation. The event continued with Frascati Superiore 2017, in which finds a magnificent elegance Malvasia Puntinata del Lazio grape, expressing from the glass an impeccable cleanness of aromas as well as a well balanced body and pleasing crispness. It is then the turn of Donna Adriana 2016 - flagship wine of Castel De Paolis and awarded with DiWineTaste Five Diamonds - in which Viognier joins Malvasia Puntinata del Lazio, vinified in steel tanks. A wine of well proven quality, Donna Adriana joins elegance to impeccable balance as well as an incredible taste-olfactory persistence of extraordinary length, a wine undoubtedly being at the top of Italian enology both for the impeccable cleanness and the recognizable aromas of the two varieties used for its production. The evening continued with the two red wines produced by Castel De Paolis, starting from Campo Vecchio Rosso 2015, in which Syrah joins the king of indigenous red grapes of Latium, Cesanese, as well as a small quantity of Sangiovese and Montepulciano. In part aged in barrique, Campo Vecchio Rosso confirms the wine making style of Castel De Paolis, in which structure, character and agreeableness find a perfect balance, a wine of extraordinary versatility at the table. The fifth wine of the evening has been I Quattro Mori 2013 - a tribute to the four red berried grapes used for its production - fruit of Syrah, Cabernet Sauvignon, Merlot and Petit Verdot, aged in barrique. Emblematic red wine of Castel De Paolis, I Quattro Mori is capable of giving intense emotions for its power and charming roundness, in which the four grapes find a full expression and identity. The event ended with another flagship wine of the winery of Grottaferrata - Muffa Nobile 2016 - in wihch Sémillon, Sauvignon Blanc and Malvasia Puntinata del Lazio grapes are enriched by the noble contribution of Botrytis Cinerea. Charming wine of remarkable elegance, Muffa Nobile has provided a worth and happy ending for this exclusive and special event which certainly allowed participants to discover the best expression of Latium wines and interpreted by Castel De Paolis. The sensorial tasting of wines has been conducted by Antonello Biancalana - DiWineTaste chief editor - who has also created, as usual, the dishes paired to the wines of Castel De Paolis.
